There are probably as many people in the world eating mesquite as rice! Most arid areas of the world have mesquite growing. The imported mesquite comes from Africa and Peru.

You can find mesquite meal online or in some health food stores. It's expensive though, that's why I grind my own. It is a time consuming process because there isn't a consumer machine that can grind mesquite. I use a household blender and grind a handfull at a time then sift the chaff out. Before grinding the beans I let them sit in a drying rack in my backyard to let the bugs hatch out of them and dry. The beans have to be completly snap dry to grind.

I started using mesquite when I moved to Arizona because of it's abundance here. I used to live in the Pacific Northwest and had balckberries on three sides of my house. I had a freezer full of berries, now it's mesquite.

There are a couple of mesquite grinders here in Arizona, one in Tuscan and one in Prescott, they are comercial hammer mills running on gasoline engines and costing a couple thousand dollars. They will let people grind about 5 lbs or so the one time a year the beans are ripe.

When I first tried to process the pods there wasn't much info available. I ruined several flour mills/food processors before I figured out how to do it with normal household machines. There is more and more info on mesquite latley, must be gaining popularity because of the internet.
